Vegan Avocado Pesto Pasta Serves 6-8 people
Cook your pasta. While the pasta is cooking, combine avocados, lemon juice, pine nuts, basil, garlic and olive oil into a food processer. Blend together you should have a nice green, smooth pesto paste. When the pasta is finished, mix the pesto with the pasta. Season with sea salt and pepper. Garnish pasta with basil and tomatoes. Enjoy!
