This recipe is super easy and you probably have most of the ingredients in your pantry. Another bonus is that you can eat the batter and not get sick because it’s vegan! For this recipe preheat your oven to 350 degrees.
2 cups of unbleached flour
2 teaspoons of baking powder
½ teaspoon salt
1-teaspoon cinnamon (optional)
½-3/4 cup of vegan chocolate chips (you can add more or less depending on your preference)
½ cup of canola or vegetable oil (your own preference)
1-teaspoon vanilla extract
½ cup of vegan milk alternative (soy, rice or almond)
Add all the dry ingredients together in a bowl: Flour, baking powder, salt and cinnamon. Mix them together.
Add oil, vanilla, and milk to the dry mixture and blend together until you have a cookie dough substance. Once everything is blended together add as many or little chocolate chips as you like.
I would suggest not greasing your baking sheet because the dough already has oil in it. Scoop your cookies onto your baking sheet (about 1-2 inch cookies). They do not spread much when they are cooking in the oven. Once all your cookies are on your baking sheet bake for 10-15 minutes. Baking time will vary depending on your oven. Once the bottom of your cookies are a nice tan colour it will be time to enjoy!
